  • 1/4 tsp Cream of Tartar
  • 1/2 cup White Sugar
  • 1 stick Unsalted Butter (softened)
  • 2 cups Confectioner's Sugar
  • 2 tbsp Milk
  • Black Decorating Frosting
  • Purple Gel Food Coloring

Instructions

  1. Preheat oven to 200°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat egg whites on low speed. Add cream of tartar and gradually add sugar, increasing to high speed until bright white and semi-stiff peaks form.
  3. Pipe meringue mounds onto the lined baking sheet, creating bases about 1 inch in diameter and 2 inches high with pointed tops.
  4. Bake for 2 hours; then turn off the oven and let meringues sit for an additional 30 minutes.
  5. While baking, prepare buttercream by mixing softened butter, confectioner’s sugar, milk, and one drop of violet gel food coloring until smooth.
  6. Frost each cupcake with purple buttercream using a piping bag.
  7. Cool the meringues slightly before decorating them with black frosting for eyes and mouths, then place one ghost atop each cupcake.
