  • 8 fresh basil leaves
  • Kosher or table salt (to taste)
  • 10 balls fresh mozzarella (bocconcini or ciliegine)
  • 5 whole pitted black olives (medium or large)
  • ½ pound thinly sliced chicken ham
  • 1½ ounces balsamic glaze
  • 8½ ounces sun-dried tomatoes (julienne cut, packed in oil)
  • Flake salt (to taste)

Instructions

  1. In a bowl, combine olive oil, torn basil leaves, and a pinch of salt.
  2. Toss the mozzarella balls in the basil oil mixture until well coated.
  3. Slice each olive in half and place one half on top of each mozzarella ball to resemble an eyeball.
