  • ⅓ cup finely diced red onion
  • 2 large hard-boiled eggs, finely diced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red apple cider vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook macaroni in salted water according to package instructions until al dente. Rinse under cold water and toss with olive oil.
  2. In a large bowl, combine cooked macaroni, gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
  3. In another bowl, whisk together mayonnaise, sour cream, sweet pickle juice, apple cider vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
  4. Pour the dressing over the macaroni mixture and toss gently to coat everything evenly.
  5. Cover the salad and refrigerate for at least one hour before serving. Stir well before serving and adjust seasoning if needed.
