Indulge in a delightful Italian-American dish with this Garlic Parmesan Chicken Tortellini. Tender cheese tortellini are enveloped in a creamy garlic sauce, complemented by perfectly seared chicken and bright, fresh broccoli.   • 9 oz cheese tortellini
  • 1 lb chicken breast, cubed
  • 2 cups fresh broccoli florets
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 tbsp butter
  • 2 tbsp olive oil

Instructions

  1. Bring a large pot of salted water to boil. Cook tortellini according to package directions until al dente. Reserve 1 cup pasta water before draining and set aside.
  2. Steam broccoli florets for 3-4 minutes until bright green and crisp-tender. Immediately plunge into ice water to stop cooking; drain and set aside.
  3. Season chicken cubes with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  4. In the same skillet, melt butter over medium heat, add minced garlic, and sauté for 1 minute until fragrant. Slowly pour in heavy cream while whisking.
  5. Remove from heat and gradually whisk in Parmesan cheese until smooth and creamy. Season with salt and pepper; if too thick, add reserved pasta water gradually.
  6. Return chicken to the skillet, add cooked tortellini and steamed broccoli, tossing gently until everything is well coated with sauce. Serve immediately with extra Parmesan.
