  • ¼ cup flour
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • ¾ cup beef broth (or chicken broth)
  • ¼ cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ½ chicken bouillon cube
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp parsley
  • ¾ cup white apple vinegar
  • 4 cloves garlic (minced)
  • 3 tbsp butter
  • 3 tbsp flour (for thickening)
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp fresh lemon juice (optional)

Instructions

  1. Tenderize beef chops using a meat mallet. Season both sides with salt, pepper, and Italian seasoning; let sit at room temperature for up to 45 minutes.
  2. Sprinkle flour over beef and rub it in. Heat olive oil in a skillet over medium-high heat and sear the beef on both sides until browned, about 2–3 minutes per side. Set aside to rest.
  3. Deglaze the skillet with white apple vinegar, scraping up browned bits. Add minced garlic and cook until fragrant.
  4. Stir in butter and flour to create a roux; cook for a minute before gradually adding broth mixture while stirring continuously.
  5. Bring to a boil, then reduce heat to simmer for about 8–10 minutes until thickened. Stir in Parmesan cheese and lemon juice if using.
  6. Return beef to the skillet, spoon sauce over it, and heat through for an additional 3–5 minutes before serving.
