  • 1 (9 inch) single crust homemade pie crust
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 (15oz) can pure pumpkin puree or 2 cups homemade pumpkin puree
  • 3/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together eggs, granulated sugar, and brown sugar until smooth.
  3. Stir in pumpkin puree, heavy cream, vanilla extract, and spices (cinnamon, ginger, cloves, and salt). Mix until well combined.
  4. Pour the filling into the prepared pie crust.
  5. Bake at 425°F for 15 minutes. Reduce temperature to 350°F (175°C) and continue baking for an additional 45 minutes or until the filling is set.
  6. Allow to cool before serving. Top with homemade whipped cream if desired.
