  • 2 1/2 cups white whole wheat or all-purpose flour
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1/4 teaspoon kosher salt
  • 1 cup warm water or warm milk
  • 2 teaspoons honey
  • 7 tablespoons salted butter, softened
  • 1/4 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a stand mixer bowl, combine flour, instant yeast, and salt. Mix in warm water or milk, honey, and 1 tablespoon butter. Knead until smooth; cover and let rise for 30 minutes to an hour.
  2. Preheat oven to 375°F. Prepare a baking sheet with parchment paper.
  3. Mix granulated sugar and 1 teaspoon cinnamon in a bowl.
  4. Roll dough into a rectangle (about 1/4 inch thick). Spread with remaining butter and sprinkle with cinnamon sugar. Fold in half and cut into strips. Twist and tie each strip into loose knots; place on the baking sheet.
  5. Combine melted butter, remaining cinnamon, and brown sugar; spoon over knots.
  6. Bake for 8–10 minutes. Quickly spoon any melted brown sugar back over the rolls; bake for another 8–10 minutes until golden.
  7. For the glaze, beat together powdered sugar, cream cheese, vanilla, and water until smooth. Drizzle over knots if desired.
