  • 3 cups corn kernels (fresh, frozen, or canned)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup crumbled cotija cheese
  • ½ cup shredded cheddar cheese
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Roast the corn in a skillet over medium heat for 5-7 minutes until golden and slightly charred. Alternatively, roast in the oven at 400°F for 15-20 minutes.
  2. In a mixing bowl, combine mayonnaise, sour cream, cotija cheese, cheddar cheese, lime juice, and the roasted corn. Mix until well combined.
  3. Season the dip with chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Adjust seasoning to taste.
  4. Transfer the dip to a serving dish and garnish with fresh cilantro and additional cotija cheese. Serve with tortilla chips, veggies, or crackers.
