  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup grated Parmesan cheese (freshly)
  • 5 chicken cutlets
  • ⅓ cup all-purpose flour
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¾ cup panko crumbs
  • 2 romaine hearts (chopped)
  • 12 French baguettes

Instructions

  1. Mix mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, garlic, grated Parmesan, black pepper, and sea salt to create the Caesar dressing. Reserve some dressing to mix with chopped romaine and refrigerate both.
  2. Prepare chicken by flattening cutlets if necessary and seasoning with salt and black pepper.
  3. Set up a breading station with flour mixed with smoked paprika in one dish; whisked eggs in another; and panko crumbs mixed with breadcrumbs, parsley, garlic powder, Parmesan cheese, salt, and pepper in the last.
  4. Heat oil in a pan over medium heat. Dredge each chicken cutlet in flour mixture, then dip into egg mixture, followed by coating in breadcrumb mixture.
  5. Fry chicken until golden brown on both sides (about 4-5 minutes per side). Drain on a wire rack.
  6. Slice baguettes open lengthwise; spread reserved Caesar dressing inside each. Layer crispy chicken cutlet and Caesar salad inside before closing the sandwich. Serve immediately.
