  • 1 cup crumbled feta cheese
  • 1/2 cup heavy cream (or whole milk)
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • Zest of 1 lemon
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet over medium heat, warm the olive oil and sauté the garlic for 1-2 minutes until fragrant.
  3. Add crumbled feta, heavy cream (or milk), lemon juice, and lemon zest to the skillet. Stir until the feta melts and forms a creamy sauce.
  4. Adjust the sauce's consistency with reserved pasta water if needed. Season with red pepper flakes, salt, and pepper to taste.
  5. Toss the cooked pasta in the sauce until well coated.
