  • 1 large egg, room temperature
  • 1 cup mashed bananas (about 2 medium bananas)
  • 2 teaspoons vanilla extract
  • ¾ cup mini chocolate chips, divided

Instructions

  1. Preheat the oven to 350 F (177 C) and line an 8×8-inch pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl for about 1 minute. Let it cool slightly.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Combine cooled butter and brown sugar in a large bowl. Whisk in the egg, mashed bananas, and vanilla until smooth.
  5. Gradually mix in dry ingredients until just combined. Fold in mini chocolate chips, reserving some for topping.
  6. Spread batter evenly in the prepared pan and top with remaining chocolate chips.
  7. Bake for 30-35 minutes or until firm around the edges; a toothpick should come out clean from the center.
  8. Allow to cool before lifting out of the pan and slicing into bars.
