  • 6 strips thick-cut Turkey Bacon
  • 1 lb boneless skinless chicken breast (or thighs)
  • 2 tbsp Turkey Bacon drippings (or 2 tbsp butter)
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup half and half
  • 1 ½ lbs Yukon Gold potatoes (cubed)
  • 1 ½ cups cheddar cheese (shredded)
  • Salt and pepper to taste
  • 1 tsp dried parsley

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Set aside and reserve drippings.
  2. Season chicken with salt and pepper, then sear in olive oil over medium-high heat until golden brown on both sides. Set aside to rest.
  3. In the same pot, add reserved drippings and sauté onion, carrots, and celery for about 5 minutes. Stir in garlic, hot sauce, Worcestershire sauce, and seasonings.
  4. Sprinkle flour over the vegetables and cook for an additional 2 minutes.
  5. Gradually pour in chicken broth while stirring continuously; then add half and half.
  6. Add cubed potatoes, bring to a boil, then reduce to a simmer for about 20 minutes until tender.
  7. Stir in chicken pieces and cheese until melted; garnish with chopped turkey bacon and green onions before serving.
