  • 1 pound boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 4 bell peppers, sliced (mix colors for visual appeal)
  • 1 small onion, sliced
  • 1 packet fajita seasoning mix (or taco seasoning)
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 2 cups grated cheddar cheese
