  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract, optional
  • 1/2 cup granulated sugar for coating
  • 1/2 tsp pumpkin or chai spice blend for coating

Instructions

  1. Prepare brown butter: Melt and whisk butter in a saucepan until browned. Cool for about 30 minutes.
  2. Blot the pumpkin: Place pumpkin puree on paper towels to absorb excess moisture.
  3. Combine dry ingredients: Whisk flour, spice blend, baking soda, and salt in a bowl.
  4. Mix wet ingredients: In another bowl, stir together cooled brown butter, brown sugar, and maple syrup until combined. Add egg yolk, then stir in pumpkin, vanilla, and optional maple extract.
  5. Combine mixtures: Fold dry ingredients into wet until just mixed. Chill dough for at least 8 hours or overnight.
  6. Preheat oven to 350°F (177°C). Line cookie sheets with parchment paper.
  7. Prepare sugar coating: Mix granulated sugar with additional spice blend.
  8. Scoop and coat: Roll chilled dough into balls, then coat in spiced sugar mixture.
  9. Bake: Place dough balls on prepared sheets and bake for 12-14 minutes. Check at 9 minutes; bang the pan if puffier than desired.
  10. Cool cookies for about 3-5 minutes on the sheet before transferring to a cooling rack.
