  • 9 tbsp salted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp heavy cream
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream/butter
  • 2 tbsp salted butter (for filling)
  • 2 cups heavy cream (for ganache)
  • 1 cup semi-sweet chocolate chips (for ganache)
  • Chopped pistachios (for garnish)

Instructions

  1. Preheat oven to 350F. Grease and line an 8×8” baking pan.
  2. In a saucepan, melt and brown the butter over medium heat for about 5 minutes. Transfer to a bowl to cool slightly.
  3. Combine flour, baking soda, baking powder, and salt in a separate bowl.
  4. Once cooled, whisk sugars into the browned butter, then add the egg, heavy cream, and vanilla until well mixed.
  5. Fold dry ingredients into wet until combined, then add chocolate chips.
  6. Spread dough in the prepared pan and bake for 22-27 minutes until golden. Let cool.
  7. Toast kataifi in melted butter until crispy; mix with pistachio cream once cooled.
  8. Prepare ganache by pouring hot heavy cream over chocolate chips; stir until smooth.
  9. Layer pistachio filling over cookie base, followed by ganache; sprinkle with chopped pistachios.
  10. Chill for at least an hour before cutting into bars.
