  • 6 slices turkey bacon, chopped
  • 4 large eggs
  • 1/4 tsp kosher salt
  • 1/4 tsp ground pepper
  • 2 tbsp butter
  • 1 medium white onion, diced
  • 2 cloves garlic, minced
  • 3 cups cold cooked rice
  • 3 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 cup frozen peas and carrots
  • 1/2 cup frozen corn
  • 4 green onions, sliced

Instructions

  1. Prepare a plate lined with paper towels. In a cold skillet or wok, add turkey bacon and heat to medium. Cook until crisp (about 10 minutes). Drain on the prepared plate.
  2. In a bowl, whisk eggs with salt and pepper. Drain excess fat from the skillet, leaving about 2 tablespoons. Pour in eggs and scramble until set; remove from pan.
  3. Increase heat to medium-high; melt butter in the same skillet. Sauté onion until translucent (5-6 minutes), then add garlic and cook for an additional minute.
  4. Add cold rice to the skillet; mix well with onion and garlic. Spread into an even layer and fry undisturbed for 4-5 minutes.
  5. Drizzle soy sauce over rice, stir to incorporate, then add frozen vegetables and sesame oil. Toss until warmed through.
  6. Remove from heat and fold in turkey bacon, scrambled eggs, and green onions. Serve hot with extra soy sauce if desired.
