  • 2 boxes refrigerated pie crust (14.1 oz each)
  • 1 can blueberry pie filling (21 oz)
  • Zest of 1 lemon
  • 1 egg, separated
  • 2 ½ cups powdered sugar
  • ¼ cup lemon juice

Instructions

  1. Preheat your oven to 425°F. Allow pie crusts to reach room temperature.
  2. In a bowl, combine the blueberry pie filling and lemon zest; set aside.
  3. Cut out six 4-inch circles from each pie crust using a biscuit cutter, re-rolling scraps if necessary.
  4. Place 1 tablespoon of filling in the center of each circle. Brush edges with egg yolk, fold in half, and seal by pinching and crimping with a fork.
  5. Beat the egg white until frothy and brush over the tops of the hand pies. Bake on a parchment-lined baking sheet for about 15 minutes or until golden brown.
  6. While baking, whisk together powdered sugar and lemon juice for the glaze. Once baked, dip warm hand pies into the glaze and let them set for about 5 minutes.
