Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk or buttermilk
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream the softened butter and sugar until light. Add eggs one at a time and mix in vanilla. Gradually mix in dry ingredients alternately with milk until just combined. Gently fold in blueberries.
  3. For the cream cheese filling, beat cream cheese, sugar, egg, and vanilla until smooth.
  4. Pour half of the bread batter into the prepared pan; spread evenly. Layer with cream cheese mixture and top with remaining batter.
  5. Bake for 55-65 minutes until a toothpick comes out clean. If browning too quickly, cover loosely with foil.
  6. Cool in the pan for 10 minutes before transferring to a wire rack.
