  • 1015 cherry tomatoes, quartered
  • 1 can black beans (15 oz), rinsed and drained
  • 3 cups cooked mixed quinoa
  • 3/4 cup water
  • 1 packet taco seasoning (about 30g)
  • 2 tablespoons olive oil
  • Optional toppings: lemon wedges, guacamole, salsa, sour cream, jalapeños

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic, diced onion, and bell pepper; sauté until softened (about 5 minutes).
  2. Stir in corn kernels and cherry tomatoes; cook for an additional 3 minutes.
