  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (thinly sliced)
  • 2 Pounds Yukon Gold Potatoes (washed and chopped)
  • 4 Tablespoons Salted Butter
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add thinly sliced onions and cook, stirring occasionally, for 40-50 minutes until caramelized.
  2. In a separate pot, boil chopped Yukon Gold potatoes for about 20 minutes until fork-tender. Drain and mash.
  3. Combine mashed potatoes with butter, half & half, and kosher salt until smooth.
  4. Stir in half of the caramelized onions and grated Parmesan cheese.
  5. Transfer to a serving bowl, top with remaining onions, chives, thyme, sage, and melted butter.
