Ingredients

Scale
  • 1 ½ lbs sirloin tips
  • 3 tablespoons flour
  • 3 tablespoons olive oil
  • 1 teaspoon brown sugar
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ¼ cup dry red apple vinegar (optional)
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups beef broth
  • 1 beef bouillon cube
  • 1 ½ teaspoons Worcestershire sauce
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • 3 tablespoons cornstarch + ¼ cup cold water

Instructions

  1. Prepare the beef by cutting it into 1-inch cubes and discarding large fat pieces. Toss with seasoning and flour.
  2. Heat olive oil in a large skillet over medium-high heat. Brown meat in batches for about 30 seconds per side; set aside.
  3. Deglaze the pan with apple vinegar and let it reduce by half. Add butter and onions; cook until softened.
  4. Stir in garlic, then add beef broth, bouillon cube, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Mix cornstarch with cold water and whisk into the sauce until desired thickness is reached.
  6. Return beef to the pan and simmer with lid partially covered for about 10-15 minutes until cooked through.
  7. Optionally swirl in cold butter before serving for a velvety finish.
