  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup baby spinach, chopped
  • 4 large eggs
  • Optional: chopped fresh basil or chives for topping

Instructions

  1. Preheat oven to 400 degrees F.
  2. In individual ramekins or one large baking dish, combine tomatoes, bell pepper, red onion, garlic, and feta. Drizzle with olive oil.
  3. Mix oregano, salt, thyme, black pepper, and red pepper flakes in a small bowl; sprinkle over the mixture.
  4. Bake for 25 minutes until vegetables are soft.
  5. Stir in spinach and create wells for the eggs; crack an egg into each well.
  6. Return to the oven and bake for an additional 10 minutes.
  7. Top with fresh herbs if desired and serve with crusty bread.
