  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • ½ tsp ground cinnamon
  • ¼ tsp fine salt
  • ½ cup unsalted butter (113 g), room temperature
  • ½ cup granulated sugar (100 g)
  • ½ cup packed brown sugar (100 g)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup granulated sugar (50 g) for rolling
  • 1 tsp ground cinnamon for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Gently fold in chopped apple.
  7. In a small bowl, combine ¼ cup sugar and 1 tsp cinnamon for rolling.
  8. Roll tablespoon-sized portions into balls and coat in cinnamon sugar mixture.
  9. Place on prepared baking sheet, spacing about 2 inches apart.
  10. Bake for 8–10 minutes until edges are golden and centers are set.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.
