  • 2 packs Pillsbury Grands cinnamon rolls (10 count)
  • Butter (for greasing muffin tin)
  • 4 large apples (2 Honeycrisp, 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in 3 tbsp water)
  • 5 tbsp butter (partially melted)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup melted butter
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla
  • 1/21 tsp cinnamon (to taste)

Instructions

  1. Preheat oven to 400°F. Grease muffin tin with softened butter. Press cinnamon rolls into each cup, spreading dough up the sides to form a cavity.
  2. Peel and slice apples into small pieces. Combine apples with remaining filling ingredients in a bowl and heat in the microwave for about 2 minutes until thickened.
  3. Scoop apple mixture into each cinnamon roll cavity using a slotted spoon to drain excess syrup.
  4. In a separate bowl, mix streusel topping ingredients until crumbly, then mound over the apple filling. Bake for 15 minutes, covering loosely with foil for the first five minutes and rotating halfway through.
  5. Whisk icing ingredients until smooth. Let rolls cool for 5–10 minutes before drizzling icing on top.
