  • ¾ cup light brown sugar (150 g)
  • ¼ cup granulated sugar (50 g)
  • 3 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (113 g), room temperature
  • ¼ cup sour cream (or Greek yogurt), room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (120 ml), room temperature
  • 1 ½ cups diced apples (about 2 medium apples)

Instructions

  1. Preheat oven to 400°F. Line a muffin tin with paper liners.
  2. For the crumble, combine ¾ cup flour, light brown sugar, granulated sugar, and cinnamon in a bowl. Stir in melted butter until crumbly; set aside.
  3. In another bowl, whisk together remaining flour, baking powder, salt, and cinnamon.
  4. In a large bowl, beat together brown sugar, granulated sugar, and butter until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Gradually add half the flour mixture; mix until just combined. Add milk and remaining flour mixture; stir until just combined. Fold in diced apples.
  6. Divide batter among muffin cups (three-quarters full) and top generously with crumble.
  7. Bake for 20 minutes or until a toothpick comes out clean. Cool slightly in the pan before transferring to a wire rack.
