  • ½ cup unsalted butter, softened

  • 1/8 teaspoon salt
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 2 tablespoons sugar (for rolling)
  • ¾ teaspoon nutmeg
  • ½ teaspoon allspice
  • ¾ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, simmer the apple cider over medium heat until reduced to about ½ cup. Allow it to cool slightly.
  3. In a mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and cooled apple cider until well combined.
  5. In another bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, and allspice.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Chill the dough for about 30 minutes in the refrigerator for better handling.
  8. Roll tablespoon-sized balls of dough in sugar before placing them on the prepared baking sheet.
  9. Bake for 12-15 minutes or until lightly golden around the edges. Cool on a wire rack.
