  • ½ teaspoon salt
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon

Instructions

  1. In a saucepan, boil apple cider until reduced to ¼ cup, about 15-20 minutes. Let cool.
  2. Melt butter over low heat until browned and fragrant; cool slightly.
  3. Whisk together flour, baking powder, baking soda, cornstarch, spices, and salt in a bowl.
  4. Combine cooled butter with sugars in a large bowl; whisk in egg, yolk, reduced cider, and vanilla.
  5. Gradually mix dry ingredients into wet until combined; let dough rest while preheating oven to 375°F (190°C).
  6. Scoop dough onto lined baking sheet; bake for 9-11 minutes until edges are set.
  7. Cool cookies briefly before brushing with apple cider butter and rolling in cinnamon sugar.
  8. Drizzle with glaze made from powdered sugar mixed with apple cider and vanilla.
