Apple Butter Snickerdoodles are the perfect blend of cozy flavors and sweet indulgence.   • 2 cups all-purpose flour
  • 2/3 cup cake flour
  • 1 1/2 tsp cream of tartar
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp nutmeg
  • 12 Tbsp unsalted butter, cold and cubed
  • 1 1/4 cups dark brown sugar, packed
  • 1/3 cup apple butter
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 Tbsp sugar
  • 1 tsp cinnamon
  • 2 Tbsp unsalted butter, melted
  • 1 cup powdered sugar
  • 2 Tbsp apple butter
  • 1/2 tsp vanilla extract
  • pinch of salt
  • splash of milk to thin out, if needed

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cream of tartar, cinnamon, salt, baking soda, baking powder, and nutmeg.
  3. In a stand mixer, cream cold butter and dark brown sugar until light and fluffy (about 3-4 minutes).
  4. Mix in apple butter, egg yolk, and vanilla until combined.
  5. Gradually add dry ingredients until just incorporated; do not overmix.
  6. Scoop dough with a cookie scoop onto a plate or baking sheet; chill for at least 30 minutes.
  7. Combine sugar and cinnamon in a small dish. Toss chilled dough balls in the mixture to coat.
  8. Bake for 10-11 minutes until puffy; cool on the pan for an additional 10 minutes before transferring to a wire rack.
  9. To make the glaze, whisk melted butter with powdered sugar, apple butter, vanilla extract, pinch of salt, and milk as needed for consistency. Drizzle over cooled cookies.
